Emulsion

A substantially permanent heterogeneous mixture of two or more liquids which do not dissolve in each other but are held in suspension or dispersion (one in the other) by mechanical agitation or, more frequently, by adding small amounts of substances known as emulsifiers. Emulsions may be mechanical, chemical or a combination of the two (commonly oil and water).
